Chocolate Chip Banana Bread

A one-bowl banana bread made with brown sugar, whole wheat flour, and Greek yogurt for a healthy yet delicious snack.  Spread it with peanut butter and enjoy!

Ingredients

  • 3 medium overripe bananas, mashed (to equal about 1 cup mashed banana)
  • 3/4 cup brown sugar, loosely packed
  • 2 large eggs
  • 1/4 cup melted coconut oil (or canola oil)
  • 1/2 teaspoon vanilla extract
  • 4 tablespoons Greek yogurt (I use whole or 2%)
  • 1 1/2 cups white whole wheat flour (or all-purpose flour)
  • 1 1/2 teaspoons baking soda
  • 3/4 teaspoon salt
  • 3/4 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees F.  Grease a 9x5 inch loaf pan and set aside.

  2. Mash bananas very well in a large bowl, using a fork or potato masher.  Add the sugar and whisk to combine (I use the same fork).  Add eggs, oil, and vanilla, and whisk thoroughly until fairly smooth and fully combined.  Stir in yogurt.  

  3. Next, mix in flour, salt, and baking soda - be careful not to overmix, just stir until everything is combined. Fold in chocolate chips with a spatula.

  4. Scrape batter into the prepared pan and bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean. Let cool in pan for 20 minutes, then invert onto a cooling rack to cool completely.

  5. Serve plain or toasted with peanut butter!  Or topped with vanilla ice cream for dessert :).  Bread will keep for up to 5 days, well-wrapped on the counter at room temperature.
